Malic acid exists in nature in the form of D-malic acid, L-malic acid and DL-malic acid. It is a white crystal or crystalline
powder with strong hygroscopicity, soluble in water and ethanol, and has a particularly pleasant sour flavor.

   

Application

L-Malic Acid is used as an acidifier in cold beverages (including Lactobacillus beverages, milk beverages, carbonated beverages, colas), frozen foods (including sherry and ice cream), and processed foods (including wine and mayonnaise). It is used as a color preserver and preservative in fruit juices. It is also used as an emulsion stabilizer for egg yolks.L-Malic Acid is also used as a cosmetic, rinsing agent, metal cleaner, buffer, retardant in the textile industry, and fluorescent whitener for polyester fibers.
