This polysaccharide is produced by α- 1, 4 Glycosidic bond linked Maltotriose repeat unit α- A linear chain polysaccharide polymerized from 1,6 Glycosidic bond, with a molecular weight of 20000~2 million and a degree of polymerization of 100~5000 [2]. (The molecular weight of general commodities is about 200000. It is composed of about 480 Maltotriose). This polysaccharide has two important characteristics: its structure is elastic and its solubility is relatively high. Pullulan polysaccharide has strong film-forming, gas blocking, plasticity, and viscosity, and has excellent characteristics such as easy solubility in water, non-toxic, harmless, colorless, and tasteless.
