L-Carvone, also known as L - (-) - Carvone, 2,3-dimethyl-5-isopropylcyclohexanone-1, is a light yellow clear liquid that is insoluble in water. Aroma additives used in food, such as chewing gum, are the main raw material for blending gummy flavors, as well as for blending spices in medicine and toothpaste.

 

 

Carvone is a member of a family of chemicals called terpenoids. Carvone is found naturally in many essential oils, but is most abundant in the oils from seeds of caraway, spearmint, and dill.
