Beta-carotene (C40H56) is one of the carotenoids, an orange-yellow, fat-soluble compound that is the most ubiquitous and stable natural pigment in nature. It is a member of the family of natural chemicals such as carotenoids or carotenoids. It is found in abundance in plants and gives fruits and vegetables their full yellow and orange color. In pure form, it is a reddish-purple to dark-red crystalline powder with a slightly peculiar odor. β-carotene in dilute solution is orange-yellow in color and is readily soluble in organic solvents such as carbon disulfide. When the concentration of the solution increases with orange, because of the polarity of the solvent can be slightly red. Unstable in oxygen, heat and light. It is more stable in weak base.
Application
1. Food additives
